Asian Braised Pork Ribs

Chinese braised pork ribs have to be one of my favourite ways to cook ribs. Simple, easy and super tasty.

Ingredients

  • 1kg of pork ribs
  • 1 tbs of oil (any will do)
  • 2 tbs of brown sugar
  • 2 tbs of light soy
  • 1 tbs of dark soy
  • 3 tbs of chinese vinegar
  • 2 tbsp Chinese Shaoxing wine
  • 1/2 cup of water
  • 2-3 slices of fresh ginger
  • 2-3 cloves of garlic
  • 2 shallots
  • Sesame seeds

Step 1

First grab a pot and fill it with water. Place it on the stove on a medium-high heat. Throw in your pork ribs and bring to a simmer. Turn the heat down to a low-medium heat and let simmer for around 5 minutes. As the pork ribs simmer, gunk will start to form on the top of the pot. Grab a slotted spoon and scoop this gunk out of the pot.

Once the pork ribs have been simmering and have changed colour (to a light grey) take them out and place them in a colander. Rinse thoroughly. Once rinsed, set them aside.

Step 2

Pour some oil (I am using vegetable but you can use whatever you like), into your wok on medium heat. Now add in your brown sugar and stir until it becomes a liquid. Keep the sugar moving as you do not want it to become hard and turn into toffee. Once the brown sugar has become a sticky liquid add in your pork ribs. Cover all of the ribs with the brown sugar syrup and keep everything moving.

Step 3

As the ribs begin to change colour (they will turn a nice brownish colour), add in your soy, dark soy, Chinese shaoxing wine, ginger, garlic, shallots and water. Mix everything together and cover with a lid. Keep your wok at a medium-low heat and let everything simmer for 25-30 minutes. Make sure to stir everything once or twice during the cooking process.

Step 4

Remove lid and cook for another 10-15 minutes mixing everything together. As you are mixing, keep an eye out for the sauce at the bottom of the wok. Once the sauce starts to become thick and sticky and coats the ribs, the oil will split from the mixture (the oil will be left at the bottom of the wok), this means the cooking has been done! Take some thongs and plate your ribs. To finish them off, sprinkle some sesame seeds and shallots over the top and your ribs are ready to eat!
